Vermicelli Upma


1. Vermicelli 2 cups (roasted)
2. Onion half cup (chopped)
3. Tomato half cup (chopped)
One cup of mixed vegetables 
4. Carrots (chopped)
5. Green beans (chopped)
6. Cauliflower (chopped)
7. Beet root (chopped)
8. Green peas
9. Cabbage
10. Cooking oil 2 tbs
11. Cumin seed 1 tsp
12. Green chili 1 tsp (chopped)
13. Ginger 2 tsp (chopped)
14. Curry leaves 4-5
15. Salt to taste
16. Curry powder 1/2 tbs
17. Black pepper powder 2 tsp


1. In a pan take 2 tbs of oil add cumin seeds, when the cumin seeds crackles add 2 tsp of ginger, green chili and curry leaves. Saute for couple of seconds.
2. Now add chopped onion and fry them till they turn golden brown, add chopped tomatoes and cook till the raw smell of the tomatoes are gone.
3. Add all the chopped vegetables (carrot, beans, cauliflower, beetroot, peas, cabbage) and fry them till they are half cooked. Add salt to taste and half tbs of curry powder, pour 3 cups of water and bring it to a boil.
4. When the water starts boiling add the roasted vermicelli and cover it. Cook on medium to high heat for 10-15 minutes or till water is completely reduced.
5. Now sprinkle black pepper powder and turn off the heat. Cover it and let it sit for few minutes before enjoying your upma.
6. Serve hot with ketchup and enjoy your vermicelli upma.
