Chicken and cheese pasta | Chicken pasta with extra cheese

Ingredients

1. Pasta shells 2 cups
2. Boneless chicken (taco cut) 1 cup
3. Onion 1 cup (cut into wedges)
4. Green bell pepper 1/2 cup (cut into wedges)
5. Cabbage 1/2 cup (cut into stripes)
6. Carrots 1/2 cup (cut into pieces)
7. Garlic 2 cloves (chopped)
8. Green chili 1 (chopped)
9. Coriander leaves handful (chopped)
10. Tomatoes 3 (cut into cubes)
11. Red chili sauce 2 tbs
12. Tobasco sauce 2 tsp
13. Black pepper powder 1/2 tbs
14. Rosemary and garlic spice blend 1/2 tbs
15. Oregano 1/2 tbs
16. Salt to taste
17. Dark soy sauce 2 tsp
18. Olive oil 4 tbs 
19. Cheddar and mozzarella cheese 1 cup 

Preparation

1. Boil the pasta shells for 15 minutes or till they are cooked, drain the excess water and keep them aside. You can add 1 tsp of salt to cook them faster.
2. Now in big pan add 2 tbs of olive oil, when the oil is warm add chopped garlic and chopped green chili, saute for couple of seconds. Now add onion and fry till golden brown.
3. Add green bell peppers, cabbage, carrots and fry all the vegetables till half cooked.
4. Take out the vegetables or side them in the pan, add 2 tbs of olive oil and 1 cup of boneless chicken. Fry the chicken for 2-4 minutes and mix the vegetables and chicken together and fry them properly. Don't add water as chicken may release some water.
5. Meanwhile make the tomato sauce. In a grinder take 3 tomatoes cut into cubes, to which add 2 tbs of red chili sauce, 2 tsp of dark soy sauce, 2 tsp of tobasco sauce, salt to taste and 1/2 tbs of black pepper powder, now add 1/2 cup of water and grind them to fine paste. (Adjust salt accordingly)
6. Add this prepared tomato sauce in the fried chicken and veggies and cook till the sauce starts boiling. Let the sauce to boil for 4-5 minutes or till the raw smell of the tomato is gone. 
7. Now add the precooked pasta shells and stir thoroughly, so that all the ingredients are mixed.
8. Sprinkle 1/2 tbs of rosemary and garlic spice blend and 1/2 tbs of oregano, mix the spices with the pasta.
9. When the water is reduced completely, add handful of finely chopped coriander leaves, mix and add 1/2 cup of mixed cheese (cheddar and mozzarella cheese), turn off the heat and cover the lid and wait for 10 minutes before serving.
10. After 10 to 15 minutes serve the pasta in a bowl and garnish with some extra cheese, and enjoy your chicken and cheese pasta.
