Schezwan egg fried rice | Egg fried rice

Ingredients

1. Basmati Rice 2 cup (cooked)
2. Onion 1/2 cup cut into slices
3. Carrot 1/2 cup cut into strips
4. Green pepper 1/2 cup cut into strips
5. Schezwan sauce 1/2 cup
6. Salt to taste
7. Black pepper powder 2 tsp
8. Eggs 2
9. Cooking oil 3 tbs
10. Coriander leaves (handful)
11. Tomato (optional)
12. Tomato chili sauce 1 tbsp
13. Dark soy sauce 1 tsp (optional)
14. Lemon juice 1 tbsp


Preparation

1.  For the ingredients take 2 cups of rice, 2 eggs and cut the vegetables in strips (onion, carrot, green bell pepper, tomato) and keep them aside. You can any vegetables of your choice.
2. Take 1 tbsp of cooking oil in a pan, break two eggs in it (you can also use more eggs as per your taste). Add salt to taste, pinch of black pepper powder and scramble the eggs and keep them aside.
3. Now in the same pan take 1 tbs of cooking oil, add 1/2 cup of onion, fry them for a minute, add 1/2 cup of chopped carrots, tomato and green bell pepper, fry till they are cooked.



4. Add salt to taste (Take care while adding salt as schezwan sauce contains salts). Add 2 cups of cooked rice and fry the rice with the vegetables nicely.
5. When the rice is fried, add 1/2 cup of schezwan sauce, 1 tbsp of tomato chili sauce and 1 tsp of soy sauce (optional),Mix the seasonings sauces with the rice.
6. Now add the scrambled eggs, handful of finely chopped coriander leaves and squeeze half a lemon, mix all the ingredients and turn off the heat.
7. Serve the schezwan egg fried rice, sprinkle black pepper powder and serve hot.
