Spinach and cottage cheese curry | Saag paneer | Creamy spinach, green peas and cheese curry

Ingredients 

1. Spinach 2 cups (chopped or shredded)
2. Cottage cheese or paneer 1 cup (cubes)
3. Onion 1/2 cup (finely chopped)
4. Tomatoes 1/2 cup (finely choppeed)
5. Ginger 1 tbs (finely chopped)
6. Green chili 1 (chopped)
7. Cumin seed 1 tsp
8. Salt to taste
9. Turmeric powder 1/2 tsp
10. Coriander powder 1/2 tsp
11. Garam masala powder 1 tsp 
12. Green peas 1 cup (optional)
13. Cooking oil 2 tbsp
14. Heavy cream 2 tbsp 
15. Red chili powder 1 tsp


Preparation 

1. Cut the paneer or cottage cheese into cubes, shred the spinach wash properly and keep them aside. Chop green chili and ginger.
2. Now in a pan take 2 tbsp of olive oil or cooking oil, add 1 tsp of cumin seeds, when the seeds crackles put chopped green chili and chopped ginger saute for few seconds.
3. Now add chopped onion and fry them till they golden brown or fried nicely, add chopped tomatoes and cook on medium to low heat till the raw smell of the tomato is gone.
4. When the onion and tomatoes are cooked, add salt to taste, 1/2 tsp of turmeric powder, 1/2 tsp of coriander powder, 1 tsp of red chili powder and 1 tsp of garam masala powder.
5. Mix all the ingredients properly, sprinkle water if needed. Once the masala is done add 2 cups of shredded spinach and cook on medium heat for 2 to 3 minutes. Cover the spinach and let it to cook. Spinach may release some water for that squeeze out all the water while washing or cook it uncovered, so that the water is evaporated.
6. When the spinach is half cooked, add the cottage cheese or paneer cubes and green peas to it. Mix them together and let it to cook uncovered for another 2 to 3 minutes on medium heat. do not add water, keep it dry.
7. Turn off the heat , pour 2 tbsp of fresh heavy cream, Cover it for few minutes before serving. If you want to keep it healthy then avoid adding the cream, it also tastes great without cream.

8. Finally serve it hot with steamed rice, chapati or naan and enjoy the creamy spinach and cottage cheese curry.
