Rawa mini idli | Steamed semolina mini cakes

Ingredients

1. Semolina (sooji) 1 cup
2. Curd 1/2 cup
3. Curry leaves 6-7 (finely chopped)
4. Green chili 1 (finely chopped)
5. Mustard seeds 2 tsp
6. Channa dal 1 tbsp
7. Salt to taste
8. Vegetable oil 2 tbsp
9. Eno fruit salt

Preparation

1. In a bowl take one cup of  semolina (sooji), add finely chopped curry leaves, 1 finely chopped green chili(optional). 

2.  Now in A small pan warm 2 tbsp of oil and add channa dal and mustard seeds when they start to splutter, pour it in the semolina. Then add 1/2 cup of curd to it.
3. Mix all the ingredients nicely, so that no lumps are formed. Don't add water, let the batter be thick enough to make the idlis.
4. Now let it sit for 10 to 15 minutes. Meanwhile, warm water in pressure cooker on medium heat and grease the idli molds using oil spray.
5. Just before placing the idlis in the mold, add salt less to taste, as eno fruit salt also contains salt. And finally add 1/2 tbsp of eno fruit salt. At this point quickly mix the batter (as the fizz starts coming)
6. Place the batter in the mold, stack the molds and keep the idli stand in the pressure cooker for steaming. Close the lid and take off the whistle.

7. Let it steam for 15 to 20 minutes on medium heat. After 15 minutes turn off the heat and let it stand for 5 more minutes. Take them out using a spoon.
8. Serve them hot with coconut chutney, sambar or enjoy all by itself. One of the easiest and tasty snack is ready to eat.
