Cabbage curry | Indian cuisine | #Cabbagecurry

Hello foodies,
          A combination of cabbage, eggplant, green peas, and some simple spices can make a delicious recipe. Though there are many types of Indian cabbage curries, this one is my favorite, which takes me to my childhood days. Let's make this yummy cabbage curry and add some health to our meal.

Serves - 4
Cooking time - 20 minutes

Ingredients

1. Cabbage 400 grams (shredded)
2. Eggplant 2 cup (cut into dice)
3. Green peas 1 cup 
4. Tomatoes 1/2 cup (cut into dice)
5. Salt to taste
6. Turmeric powder 2 Tsp
7. Red chili powder 1/2 tbsp
8. Garam masala powder 1/2 tbsp
9. Onion paste 1 tbsp
10. Ginger, garlic paste 1 tbsp
11. Cooking oil 2 tbsp
12. Coriander leaves handful (optional)
13. Asafoetida (Hing) two pinches 
14. Five Spices (Panch Phutana) 1 Tsp
15. Cumin seed 1/2 Tsp

Preparation

1. In a thick bottomed pan, take 2 tbsp of cooking oil, add two pinches of asafoetida (Hing) Five spices (Panch Phutana) and cumin seeds. When the seeds start to crackle add the cabbage.



2. After you add the cabbage, add diced eggplant, one cup green peas, diced tomatoes, and onion, ginger, garlic paste.



3. Now add the seasonings, salt to taste, 2 Tsp of turmeric powder, 1/2 tbsp of red chili powder and 1/2 tbsp of garam masala powder.



4. Mix all the ingredients, cover and cook on medium heat for 15 to 20 minutes. Stir in between to avoid burning from the bottom.



5. The delicious cabbage curry is ready to eat, take out and serve hot with steamed rice or chapati for breakfast, lunch or dinner.
